Vegetable Fried Rice Cut one large onion. Chop some garlic Cut leeks, cabbage and some carrots thinly. Add some oil in to a pan. I added a table spoon oil only. You can add butter instead. Add the onions, garlic and some curry leaves in to the oil and stir fry well. I used frozen peas directly. So it needs to cook a bit longer. Add at this stage. For this you can use left over rice . It can be white or yellow. When cooking I added some turmeric powder in to the rice to get the colour. Take the rice out and leave to cool down if you are not using the left over rice. Add the vegetables in to the oil and stir fry well. Add some salt and pepper to your taste. If you like you can add a stock cube to get extra flavour too. Add 3 eggs in to it. If you like you can add more. Always make a well in the centre and then add the eggs and leave to set. After scramble the eggs with the vegetables. Another way is adding after making omelette. That way it takes longer. If you are a vegetarian omit the eggs. After add the cooked rice. Stir fry well and serve with chutney or a curry or as it is.
