White Potato Curry

This is about 750g. Boil Some Potatoes. Leave to cool and peel them . Make sure not to over cook the potatoes.


Then cut the potatoes in to wedges. You can cut them as you wish. I like to cut them in to wedges for this curry. Thats how my mum used to do all the time.????


Prepare the spices and herbs. I am using 1 onion chopped, 3 inches cinnamon, curry leaves and Pandan leaves. 1/2 tsp Turmeric powder, 1 Tsp Curry Powder.and some fenugreek seeds. If you are not a vegetarian or a vegan you can use Maldive fish flakes too.


As I am not using any chilli powder in this curry, I used fresh chillies. The green ones the best. Cut several chillies in length ways.


Add all spices and herbs with chillies in to a pot. Add enough salt to your taste. The add about a cup or 1 1/2 cups of water to the pot. Mix well.


Add the cut potatoes in to it. Stir well and cook about 5 minutes covered. That way it cooks well with all the spices and goes through the potatoes and tastes better.


After add 1cup thick coconut milk and sir well. Bring to Boil.


make sure to stir well. If you cover the coconut milk will spill over. After adding coconut milk don’t cover the pot.


The curry is ready. Serve with Plain rice, string hoppers or even pittu.
